Tomato and Basil Salad

Prep Time:  10 min
Equipment: Paring knife, 1 bowl, 2 ramekins for mixing
Serving size: 2

1/2 pint cherry tomatoes
5-10 leaves fresh basil
2 T extra virgin olive oil
2 T balsamic vinegar
1 t sea salt
1/2 t black pepper
2 oz fresh mozzarella (optional)

Rinse and dry cherry tomatoes. In a bowl slice in half, lengthwise.
Using hands, tear basil leaves into small bits, excluding stem. Sprinkle over tomatoes.
In a ramekin, mix the olive oil and balsamic vinegar.  Pour over tomato/basil combination and incorporate.
In your second ramekin, combine sea salt and pepper.  Sprinkle over tomatoes and combine using a spoon or you hands.

Plate on a small serving dish. Show above, with slices of mozarella, the salad is known as Caprese.  This salad is always a treat by itself or with a baguette and your favorite wine.
