Persephone’s Desire: Ice Cream Sundae

How could you blame her? Crossing over from the Underworld, Persephone’s will faltered as she succumbed to hunger and the temptation of the pomegranate. Could you have resisted this dessert? Dried and chocolate covered pomegranate seeds top this dish of coffee gelato and warm hot fudge.

To simplify the dish, I suggest purchasing a pint of your favorite gelato. However, the hot fudge is so easy and quick to make, I do recommend giving it a try.

 

Prep & Cook time: 15 min
Equipment: small pan, spoon, blender
Serving size: 2

2 servings Coffee Gelato or Ice Cream
Pomegranate Seeds

  • 2 T Chocolate covered (Can be found at Trader Joe’s)
  • 2 T dried or fresh (depending upon availability and season)

4 T Hot Fudge (recipe below)

Hot Fudge
2 oz unsweetened chocolate
½ c. water
1/4 c. sugar (evaporated cane juice recommended)
1 T unsalted butter
1 t vanilla or dark rum

Bring water and sugar in pan to a rolling boil for 5-7 minutes until sugar is fully dissolved and forms syrup. Lower heat, add chocolate and stir until dissolved. Do not let the chocolate boil as it may scald. Add butter and stir until melted. Remove from heat, pour into a blender. Blend on low for  1-2 minutes, adding vanilla or rum in the final seconds. 

Assembly:
Drizzle warm fudge into bottom of serving dish. Scoop gelato into dish. Drizzle hot fudge on top of gelato. Top with pomegranate seeds. Indulge!
