Serving size: Approx 1 cup
4 eggs (hard boiled)
2 T mayonnaise
1-3 t curry powder (variant on taste)
1-2 T water
1 stalk celery
1 green onion
Salt and pepper to taste
Boil eggs in salted water. Cool and chop. Dice celery and green onion Place all ingredients in a bowl.
Heat curry in water to make it saucy. The curry flavor is released with heat. Remove from heat and continue to stir to cool. Add curry to mayonnaise. Stir curried mayo into the egg salad until well incorporated. Salt and pepper to taste.
