The cucumber, like the body is mostly water. It’s juicy, refreshing and versatile. I just love foods that you can transform into a variety of recipes. Drink this after a workout to hydrate and replenish electrolytes. That’s how I first learned to enjoy cucumbers as a drink. After a jaunty little trek up Kala Pattar, my Sherpa pulled the most beautiful cucumber from his pocket and the rest is history.

Ingredients
1 cucumber
1 stalk celery
1 c frozen or fresh pineapple
24-30 fresh mint leaves
¼ c milk (nut, rice, dairy) or juice

¼ c milk (nut, rice, dairy) or juice
Instructions
Rinse the cucumber, celery and mint. Peel and dice cucumber small enough for your blender’s power to blend. Do the same for the celery. Pull mint leaves from the stems. Combine all ingredients except the milk/juice into blender and blend until smooth. Add milk a tablespoon at a time until the desired consistency is achieved.
